The sizes listed in the options menu are the printed image sizes (inches) - choose borderless or to add a half inch border - adding a border will not change the printed image size, it will increase the paper size.
Prints under 25" (long side) will ship flat to most U.S. locations - larger prints will be shipped in a sturdy mailing tube.
